Soup. Soup is a great lunch item, something light, but yet filling.

This cream of vegetable soup recipe is simple to make and 100% plant-based.

When I was growing up, and well into adulthood, I thought that soup was too complex to make. Then one day I had a ton of vegetables that weren’t going to last much longer, I threw them in a pot, with some almond milk and BOOM soup!

The best recipes come when you least expect it. This is by far my go-to soup! It doesn’t have a huge calorie count, and you get a strong serving of vegetables.

I am a big believer that eating healthy shouldn’t break the bank, and it shouldn’t involve spending hours in the kitchen.

As much as we think soup might be complicated to make, this recipe proves that theory wrong.
