Ingredients

4 ½ tsp. Quick Rise Yeast

¾ cups warm water + 2 ⅔ cups warm water

Pinch of Salt

¼ cup of Honey

9-10 cups of Whole Wheat Flour

  1. Combine 4 ½ tsp of quick rise yeast with ¾ cup of warm water and let sit for 5 minutes.
  2. Combine 5 cups of flour and pinch of salt.
  3. Add the yeast water to the dry mixture, add additional 2 ⅔ cups of water and honey.
  4. Stir with hand mixer or by hand.
  5. Add the rest of the flour until the mixture is smooth and stretchy ( not to dry, but not too sticky), you may not need all the flour.
  6. Knead the dough (I find it turns out better by hand), for 10 minutes.
  7. Place the dough ball in the bowl and cover for 40 minutes, until it is double the size.
  8. Punch the dough down and knead again on a floured surface.
  9. Cut the dough into 4 even balls.
  10. Knead each ball briefly and shape into a loaf.
  11. Place the kneaded loaves into 4 greased 9 x 5 x 2 ½ loaf pans.
  12. Bake the bread for 30-40 minutes, until golden brown and sounds hollow when the bottom is tapped.
