Ingredients
4 ½ tsp. Quick Rise Yeast
¾ cups warm water + 2 ⅔ cups warm water
Pinch of Salt
¼ cup of Honey
9-10 cups of Whole Wheat Flour
- Combine 4 ½ tsp of quick rise yeast with ¾ cup of warm water and let sit for 5 minutes.
- Combine 5 cups of flour and pinch of salt.
- Add the yeast water to the dry mixture, add additional 2 ⅔ cups of water and honey.
- Stir with hand mixer or by hand.
- Add the rest of the flour until the mixture is smooth and stretchy ( not to dry, but not too sticky), you may not need all the flour.
- Knead the dough (I find it turns out better by hand), for 10 minutes.
- Place the dough ball in the bowl and cover for 40 minutes, until it is double the size.
- Punch the dough down and knead again on a floured surface.
- Cut the dough into 4 even balls.
- Knead each ball briefly and shape into a loaf.
- Place the kneaded loaves into 4 greased 9 x 5 x 2 ½ loaf pans.
- Bake the bread for 30-40 minutes, until golden brown and sounds hollow when the bottom is tapped.
